IMPORTED FLOUR.
TO THE EDITOR OF THE PRKSS. Sir.—l may say, for "Subscriber's" information, that a little while ago I read in one of the trade papers, "American Miller," I believe, that sulphur had a very injurious effect on wheat. I cannot lav mv hand on tbe paper containing the article just now, but if my memory serves mc right, the sulphur had heen used to kill insect pests (moths, etc.}. in the building in which the wheat was stored. They found after that the flour made from the wheat was usele-s for bread-making purposes ; the sttphur had destroyed the glutin. Consequently, if it injures the wheat, I should be inclined to think that it would be hurtful to the flour in the same way. Dr. Symes, I see, treats it from a health point of view, hut what about it from a commercia'. standpoint?—l am, etc., CONSTANT REABER. Winchester. May 16th. 1902.
