TO THS KDITOR OF THE PRHSB. Sir,—Allow mc to refer to a paragraph which appeared in your paper on sth inst, re the Tai Tapu Dairy Factory, which states that 6-21 gallons of milk was received into the factory last week, from which was made 1117lbs of butter, for which the full market value was obtained. Being interested In the butter industry myself, I with many others am naturally watching tbe results of tbe factory at Tai Tapu, and am very much disappointed if the statement referred to be correct, The figures quoted show that more than 5| gallons of milk was required to each lib et butter produced. The present marke, value of potter Is say la Id par lb, and new mjlj- at this season of the year ought to be worth Sd per gallon, and allowing 14 per lb tor manufacturing, brings the net cost to ls6d per lb.
