TESTED RECIPE

SPREADING BUTTER RATION

A simple expedient for making the 6oz butter ration more accommodating is recommended by a housewife. She states that complaints from people who take extra toll on their ration because of cut lunches would be unwarranted if they would treat it by the following method:—Partly warm a quarter of a pound of butter, then add a quarter of a pint of hot milk in which is dissolved a level teaspoonful of gelatine and a quarter of a small teaspoon of salt. Beat with an egg beater till the mixture begins to thicken, and leave it to cool.

The present cold weather is making butter even more difficult to spread, but this method, ideal for sandwiches, is smooth-spreading, simple and economical.
