CHEESE BALLS

Half an ounce butter, lib mashed potatoes, two tablespoonfuls grated cheese, one egg. Melt butter in a saucepan and add the potatoes, cheese, pepper and salt, and the yolk of an egg. Stir over a gentle heat until the cheese is melted and the whole is blended. Spread the mixture on a plate until cold. Then form into balls, dip in seasoned flour, in white of an egfe and breadcrumbs, and fry in deep fat until brown. Drain on paper and serve immediately.
