STANDARD MILK.

The annual report of the Auckland Metropolitan Milk Board for the year ended % Juiy 31, 1939, showed the total quality of milk produced for supply \ra» 9,122,124 gallons. During the year 5412 samples of milk were taken and the analysis of these samples showed an average butterfat content of 4.53 per cent and of Eolids-not-f&t 8.82 per cent. The legal minimum requirement* o f butterfat ie 3.25 per cent for mflk for consumption in fluid form. The Auckland Metropolitan Milk Board require* a minimum fat content of 3.5 per cent. If the Metropolitan Milk Council resolved that all milk supplied in- their district should be standardised to 3.5 per cent, there would be a surplus from the 9,122,124 gallon* of no lees than 939,5781b ibutterfat of a. total value at 172 per lb of £.34.808, well over £1000 a week, If the milk were standardised to 3.25 per cent there should be a surplus of £1,167,6311b butterfat worth, at 1/2 per lb, £68,111. Thie solid contribution could be made without inflicting anv hardship or inconvenience upon the consumer*, who would he getting a milk supply containing 3.5 per cent butterfat and 8.28 per cent J. P.
