WHEN MILK IS BOILING.

To prevent milk from boiling over, put a pie chimney in the middle of the saucepan of milk. A clean marble placed in the pan will serve the same purpose. The marble can be placed in a preserving-pan when jam-makinjr, too, as this will save so frequent stirring. When boiling the marble rolls with the vibrations of the pan and so the jam does not stick so easily. A marble placed inside a kettle, too, in which water is boiled for tea will collect "fur."
