ECONOMICAL DISHES.
COCOA MOULD BLANCMANGE. Ingredients: Three dessertspoonfuls cornflour, U dessertspoonfuls "cocoa, 1 pint milk (or milk and water), pinch 01 salt, sugar and vanilla flavouring to taste. Method: Mix the cornflour and cocoa together, then mix to a smooth paste with a small quantity of the milk Heatthe remainder of the milk, with the salt and sugar added, then stir in the cornflour, etc. Return to the pan and bring to the boil, and boil gently * tor iu minutes, keeping it well stirred all tue time. Add vanilla flavouring to taste. Pour into a wet mould and leave untu set, then turn out and serve. Note.—lf liked less stiff, itse only 2J instead of 3 dessertspoonfuls o* cornflour. LIVER CUTLETS.
Now that doctors recommend liver s? strongly, here is a dish other than li«. and bacon. This can be' prepared _W* night before, and is sufficient for i» people: Quarter pound liver, one ano» half ounces streaky bacon, qua"; pound flour, ioz butter, oiie egg, q« a " pint water or stock. Pry . % bacon lightly, chop finely .Meltlax, »•■• in flour smoothly, add stock; stu vboils, and see there are no lumps.;,»•» chopped liver and bacon, mix well, «*> to taste. Turn out on a plate. _.""'- cold form into cutlets. Brush Wlt(M = - (or a paste of flour and -milk wi«.«" '■ Roll in the breadcrumbs; fry *'• needed in hot fat till a golden brown.
