"A new luncheon dish or entree is always welcome, and the following- is well worth trying - ," says Miss Una Carter, the wellknown cookery expert and gold medallist. "Take two slices or fillet of veal one Inch thick, one cup crumbs, a little chopped ham or bacon, pepper, salt, Lea and Perrlns Sauce, very little thyme and parsley; lemon juice, some browned flour, and two small cups gravy or stock. Take any bone out unci flatten the fillets, make a forcemeat or the crumbs, ham, thyme and 'parsley, Lea and Perrlns Sauce and lemon juice, and spread over. Roll the meat up and bind in two oblong rolls with string, Hour and lay in casserole, pour over the two cups stock and bake two hours. Serve on hot dish, remove string, thicken gravy witli.a good dessertspoonrul of browned hour, season with salt and pepper, a few drops or Lea Perrins sauce.- Boil up at once, pour over and serve. Note: It is important that the sauce used in seasoning should be Lea and Perrlns. The special blend or ingredients in this sauce both gives and draws out a flavour which cannot otherwise be obtained."—(Ad.)
