COCONUT MILK CUBES.

Put about half a pound of shredded coconut into a basin, and cover it with a little milk. The coconut should not swim in the milk, but just soak it up. While the coconut is soaking, put a pound of white granulated sugar into a saucepan, and stir over a low gas until it becomes a syrup. Take care it does not turn colour or burn. When the syrup is boiling, stir in the coconut, and continue boiling till the mixture becomes quite thick. Turn out on a buttered dish, and, when cool, cut, it into cubes with a large sharp knife. You may colour the mixture pink with a few drops of cochineal, and add some glace cherries and pieces of candied peel if you want more elaborate sweets. I
