. A , correspondent, "Cider" asks for simple recip© f or cider. Cider is the fermented juice of apples, which is first extracted by crushing the fruit and subjecting the pulp to great pressure till the" juice has drained away. This is allowed to ferment m barrels, which in some cider districts are left open at the top, and in others closed and simply covered with! a. cloth. When active fermentation i has subsided it is drawn off into a cask 1 where it is left for. some months to, mature before it ia ready for bottling or' drinking. Some effervescing cider in : South is sold for champagne.; which it almost rivals in bouquet and i colour. Wedding break fusts are usually pro-. vided by the bride's parents, the bride's j mother being hostess at the ceremony, and this, of course, includes the wedding 'dke, about which inquired.
