The manager of a Taranaki dairy factory enclosed a note in a bottle in a cheese exported to England. Several questions were asked in the letter, which came into the hands of an Uford firm, whose reply has now been received.

In answer to questions asked in the letter the firm stated: "The quality of the cheese is certainly good; in fact, a

little above the average of New Zealand cheese. This parcel of cheese was bought by us about July 19. The price paid was 94/ per cwt. The average loss in weight in the parcel was 51b per crate. This is quite an average loss at this time of the year. We find that a good white cheese of, say, between 821b and 841b weight, is a saleable proposition, especially between March and August. As coloured cheese matures more quickly we find a better sale for these, say, between the end of December and March. It is quite necessary for cheese to be matured. New cheese we have no sale for.

"In regard to Canadian cheese, we prefer cheese weighing up to 1101b, especially if made late in August or September. These cheese always realise the best prices.

"New Zealand very nearly lost its reputation for butter two seasons ago, solely through control. We have pushed the sale of New Zealand butter ever since

1912, believing it to be the first obtainable, but we had to stop the sale during the latter period of control, when butter was being put on the market after 12 to 20 months in store. Of course this holding up of the butter absolutely spoilt its quality and gave it a bad name. This was the sole cause of the great slump in price."
