PUDDIXGS FOR THE STATES
Soaked in spirit, thousands of English plum-puddings were shipped every week to the United States for the Christmas celebrations there. All these puddings had a strong rum and brandy flavour. According to a representative of a big firm of London caterers no one could eat enough plum-pudding to get drunk. He ado ed: "Every year the demand for Christmas puddings from England increases, ami there is no doubt that England leads the world in pudding making. In the United States there is no trouble -with the Customs. It is possible for a pudding to be eaten in America ten days after the order for it has ben received by us." Plum-puddings are now being sent in large numbers to all parts of the world. The largest demand is from Australia and India. More than 120.000 puddings have been sent out by one firm alone. Here is a list of some of the ingredients used. 17 tons of suet, 9 tons of orange peel, 9 tons of lemon peel, 22 tons of currants, 17 tons of sugar, 4.1.000 eggs. 3000 bottles of rum, and SOO gallons of milk.
