DAIRY COMPETITIONS.

EVENNESS OF EXHIBITS A remarkable evenness of quality was shown in factory butter and cheese, which attracted keen competition. The entries numbered 35 of butter and 23 of cheese, compared with 2S and 18 respectively last year. The judging was carried oat by the chief (iovernment grader for Auckland. Mr. A. A. Thornton, and members of the staff of trie Dairy Division. In their report tile judges state: —

"The competition is, from a show point of view, unique in that the butter and cheese were not specially made for show purposes, and are therefore thoroughly representative of the everv-day quality of the dairy produce coming forward to the grading stores for export. The entries represent factories from all parts of the province, fom lvaitaia in the far north to Opotiki in the Bay of Plenty, from the Kinsr Country to the VVaikato, Thames. Valley, and the Waiuku districts. They are also representative of the last* overseas shipment by the Remuera. This shipment comprised 03,833 boxes of butter and 4394 crates of cheese, and the f.o.b. value amounted, to £319,000.

'The quality standard of the exhibit is a liijrh one. a7id the points scored are practically identical with the everyday grading scores. The makers must he congratulated for their efforts in this direction.

"It is fitting and safe to remark that the future of the Dominion depends on the success of the dairy industry. This is acutely defined in the Auckland Province, which must always l>e almost solely a dairying one. Each year a material increase in butterfat production will be recorded. The watchword therefore must always be 'quality,' and if this vital necessity is observed in its truest sense, no alarm need ever he felt for over production."
