Sir,—A few days ago your paper published an interesting item of news to the effect that British dyes for the purpose of colouring bacon, fish, etc., would be admitted on favourable terms. A good many housekeepers besides myself are wondering what our Health Department is about to allow food to be disguised and palmed off on the public. It is becoming a rarity to get what we believe we are buying and paying for. Dyed smoked fish and bacon are ! rather different articles to what we were accustomed to years ago.—l am, etc., LA VIELLE.
