A correspondent request* us to repeat a recipe for pumpkiu jam which she ' thought very good. Ingredients. To each Tb of pumpkin add 17b of sugar, -1 ta/blcspoonfuls of lemon juice, ihe finely grated rind of one lemon. an<l \ a tea-spoonful of ground ginger. Method, i'tivc mill hahe the pumpkin, remove the seeiK .md slice thinly. Turn the whole into a preserving pan, add the lemon rind and ginger, and continue Hie cooking until the slices of pumpkin are not broken but quite tonder. Transfer carefully to an earthenware bowl and let remain for seven days, covered, hen lift the slices of pumpkin into the jars and strain the syrup into a .preserving pan. Boil the syrup till it will draw into a thread between the thumb and finger, cool and pour over and you will have a very excellent substitute for preserved ginger.
