WHITE BREAD AND MEDICAL OPINION.
(To the Editor.) Sir, —If it be true that according to scientific research such articles of food as white flour (made from refined wheat), polished rice, and refined 6iigar are all injurious to health, it seems strange that the medical superintendents •of our public hospitals should permit their use by the patients. These superintendents are all qualified medical practitioners, with considerable experience, and it is reasonable to suppose that any reform in diet that would benefit the health of the community would be vigorously carried out by them as soon as it became evident that such a reform was desirable or necessary, and ! thus lead the way by setting a good example. But as the position at present is the spectacle of the Minister of Health declaiming against the use of white bread and the hospital doctors calmly continuing to feed their patients with it is nothing less absurd than a Gilbert and Sullivan comic opera. —1 am. etc., J.H.A.
