A means of utilising the 20.000 to 80,000 tons of cherries annually lost in France from lack of transportation facilities is proposed by Mons. P. Carles. Cherries and other garden fruits do not readily yield wines, but it is found that the difficulty may be very simply evercome by making up their deficiency in tartaric acid. Fermentation then proceeds satisfactorily, as -with grapes.
