THE BAKING TRADE.
(To the Editor.) Sir, —In answer to the letter championing the cause of nightwork against the more humane and rational system of day work, I still maintain that there ia no need for the night work, if more and better appliances and oven room, were provided, and I can safely say that Mr. Mclndoe will not get any two men in Auckland, if they speak honestly and fairly, to back up what is said by him about night work, as under that system a Jman's life is little better than a dog's life, he having nothing in I common with other people, and cannot take part in any social function or amusement, unless he likes to do without sleep or rest, and must become .in a few years a broken down man. I could take Mr. Mclndoe back to the old days on the Thames Gold Fields, where the day work first started, and our respected citizen, Mr. Meanie, of the firm o! Mennie, Ijtd., was, and ia now, carrying on the baking business. When some dissatisfaction occurred in the trade, and some of the master bakers wished to alter the hour of starting, namely five o'clock in the morning, he replied no, that he got more and better work in the daytime, and I am given to understand that day work is still carried on in his establishment thore, after a trial of 35 or more yeaTS. I could get plenty of other men to speak in the same terms —that is, if they spoke fairly and honestly.—l am, etc, J. STACIE. Auckland.
