LURKING EVILS.
Once more the "British Medical Journal" calls attention to the danger of infection from various avoidable causes We pass by the evil of kissing, as it may be argued that that is not avoidable. But cleanliness i n drinking glasses and such eating; apparatus as knives, forks and spoons makes Another story. The difficulty of keeping these things clean almost drives one to a belief in the theory that, as finders were made before knives and forks, they axe more refined aids to dining. So long as people remain in their own homes, they can make pretty cure of having their knives, forks, and spoons well washed. Immediately they be«in to take meals out the assurance fails Chicago is now being reminded of a fact well known in London, that, though the front rooms of a restaurant and cafe may be a work of art in decoration and a model of cleanliness, the kitchen may be stuffed away in a basement or back room where dirt, evil smells and other insanitary conditions prevail That future generation which is to be really civilised will make many changes in the scheme of public dining. Perhaps it will examine the cooking of its own food, and wash its own knives and forkg.
