Some weeks ago a correspondent of one of the local papers, writing on the dairy industry of the colony, made .charges on the score of uneleanlines-s j against some colonial farmers in milk-j ing. The Dairy Commissioner 1. Mr J. A. ! Einsella) made some remarke on the! same subject in a lecture to farmers at j Carterton the other night, practically : bearing out what the correspondent in question had previously said. Mr Kin-1 sella ia reported to have said that he. thought the farmers in many districts | were very careless in their milking. He j tad visited many parta of the world, and \ in }few Zealand they had the dirtiest system he had seen, though it was pretty hard to get over. In certain parts lie had seen filthy habits practised, moistening the teats by dipping the hand in the 'milking bucket, and wearing filthy clothes while milking. There were, he Eaid, not a sufficient number of qualified men appointed to undertake the work of inspection. The Government was anxious to help the dairy farmer to get the raw material- to the factory in better condition. Neither good butter nor cheese could be made if the raw materialwas not .pure. Mr Kinsella also strong-fy-a4vocated the improvement of the dairy herds.
