Sir,—Will you kindly allow me throug* the Columns of your valuable paper to appeal to the consciences of the master bakers Of Auckland and ask them, considering the tremendous profit they make thereby, if they cannot supply our young: people with some more wholesome and palatable 'hot cross buna' than they are in the habit 6f doiftg. I am sure there are very few.parents but will agree with me that the close, heavy, insipid, sometimes bitter, unwholesome, indigestible buns that are supplied to our families year after year are a disgrace to a respectable body off tradesmen like our city bakers and pastrycooks. This will be the thirty-fifth Easter I have spent in the Province of Auckland, and during the whole of that time I have never seen or tasted a hot cross bun to compare with those supplied by the bakers of the midland counties in the Old Land, which were, twice- the size, light, and of delicious flavour. I am sure if some expert in the trade would introduce a bun of superior size and genuine quality he would obtain enormous patronage and deserve the lasting gratitude of both parents and juveniles. I- repeat, the heavy, doughy, diminutive buns so many bakers turn out are a disgrace to the trade, and should b« totally rejected by the public—l am, etc, ONE WHO LOVES THE BAIRNS.
