LECTURE ON MILK AND MILK TESTING.

Frofesior Brown delivered a lecture ato the requesb of the Agricultural Association, in the University College Buildings, Edenstreet, last evening, on "Milk and Milk Testing." The chemical lecture hall was crowded with members of fche Association and others. The lecturer introduced bia subject by speaking about the chemical composition of milk. He afterwards spoke at length of the various methods of ascertaining the quantity of butter fat in milk for dairying purposes, from the time when it was determined by the rising of the cream and tbe lactometer to the present time, when, by the solution of the casein with oulphuric acid, ths butter fab is easily separated by centrifugal force, and the araounb thus osceertained (Babcock test). The lecture was illustrated by a series of experiments, and by a limelight apparatus. Professor Brown, who was listened to with the greatest attention throughout, was accorded a most hearty vote of thanks, on the motion of Mr Kirkbride, seconded by Mr Ambury.
