IOW CATTLE ARE SLAUGHTERED IN SOUTH AMERICA.
A correspondent, who aptly subscribes bhiself "A Globe-trotter, furnishes us «.Mi a few interesting.- ~*»ti<miar» of the mole in which cattle arc slaughteicd on tbo Unguay. According to his account the Anurican plan is far more expeditious and cleai than that which is popular in Australif, but of this our readers may form their own conclusions. Attached to the yardsthere are three corrals or yards. The lirst it the largest. Into this the herd is driven, and a large draft is taken in the second yard, from which a few at a time are driven nto the third, and a kind of last. A lasso isthrown over the horns of one of the cattle inthislane and a horseman, havingtwo horses, pills the rope or lasso, which goes over a pillcy, by which means the ox is pulled 01 to a carriage with his head against tie door. Two men now stick their knives fran above over the side into the back of hs neck, and the animal falls down. Ihe rope a let loose andcomes off the horns; the door nses, and the carriage is pulled away into'ithe shed; another carriage is pushed in, bid the door falls. Meanwhile the horseniin has como back, Wheu the carcase gets into the shed it is pulled off the carriage,, and the neck is immediately cut, to let tie blood ont. The carcase is skinned, and the head cut off in the usual way, and tlxt abattoirs, which are well floored with itono, are regularly washed down, and, air informant states, kept scrupulously dean, although 1000 head are often disposed if in this'way in one morning. One firm killed during the season ending June, jB7B, no less than 146,000 head of cattle, of which every ounce was put to some use. The special advantage of the trucking system seems to be that the skinning and othtr necessary work is done far from the spit where the beasts are waiting for slaugttser. •., ■ ■•,
