The farmer will do that which pays him be3t, sell milk or make cheese ; but the price of tbe latter commodity nuitba fixed at a reasonable baais'. The cost of cheese preduatioa has gone up very much, rennet, cheese makeis , . wages, salt, and in fact, all ingrtdients contributing their quota It must also ba remembered that when cheese making was given up, the presses and other apparatus were scrapped or disposed of, aud- cannot be easily replaced in these days, unless with Government assistance. The production of English cheese therefore depends upon the sym pathetic consideration of these matters by the authorities, ''Grocer." March 2a.
