Slß,— We note ** Cheesemaker'u Letter " re second grade cheese. For hisinforrr.ati jn we may tell him that only yesterday we sold 23 caßea of 2cd or 3rd grade factory cheese at 4|d delivered, and if "Cheeaemaker " would only be good enough to write to two or three of the principal wholesale merchants and ask them for the price of factory ohee.e, second quality, he will get all the Information he requires. The line pursued by any factory, whose choese is inferior, is sot to put either brand or grade on the oases, and nobody knows where it comes from. The factory manager lakes very good .are, knowing the quality himself, as well as the grader, not to submit any such parcels to the grader for export, of course, with the oonsent of the Director. Trust ing this explanation is satisfactory,—We are etc.
