PROFITABLE USE OF SURPLUS APPLES.

A very important industry, yet one uet generally practised, is the production of Apple Butter .and Apple Jelly. There are several grades of apple butter. The best is made from green apples, steamed or cooked (o a pulp, and then passed through a sieve so as to remove skins and seed-:, and then sweetened with sugar, spiced and cooked to the proper consistence. Apple jelly is made by slicing sound green apples and cooking them by steam. After the apples are cooked to a soft pulp, the juice is pressed off, mixed with an equal quautity of sugar. and the whole is evaporated to a jellying point. It is then filled into glass jars. There are some other grades of these preparation?, but those heroin quoted arc generally preferred. The manufacture ol these products oilers an outlet for suiplur. aud low-grade apples.
