Spinach Roll. Cook two quarts of spinach for about 15 minutes; drain. - Add one tablespoonful of butter and cook until tender. Chop fine. Add one cupful of grated cheese, salt and pepper to taste, and enough breadcrumbs to form into roll. Cook in baking dish for fifteen minutes and serve hot.
A Savoury Rice Salad. Boiled rice, grated cheese, cucumber, radishes, raw onion, etc. Boil some rice in milk and water. When cooked and firm pile it high in a vegetable dish. Coat it with grated cheese, and surround it with sliced cucumber, radishes, chopped onion, and grated carrot; beetroot, if liked.
Celerv as a Purifier
Those who suffer from rheumatism often find great relief-by including celery in their diet, and this useful vegetable is also a good blood purifier, and therefore excellent for folk who are troubled with bad complexions. Celery should be chosen with care when it is bought. Select well-balanced, finely fibred roots, with the outer stems tinged to a deep pink. The delicate central steins are generally eaten raw with salt, as an accompaniment to bread and cheese.
Eggless Chocolate Cake
One cup brown sugar, one tablespoon butter, one-fourth cup cocoa, one-fourth cup boiling water, onehalf cup sour milk, one-half teaspoonful soda, one and one-fourth cups flour, one teaspoonful vanilla. Mix sugar, butter, and cocoa, and add boiling water. Add soda to flour and add flour and milk alternately to sugar mixture. Add vanilla. Bake in layers' in a moderately hot oven about thirty minutes. The lightness of the eggs is supplied by sour milk and soda instead of a large amount of baking-powder. No frosting is needed.
' Jellied Prunes.
Wash one pound of prunes, soak in cold water over night. In the morning bring to boiling point in same water, simmer without boiling three or four hours or until prunes are soft, but not broken; add one-half cup sugar the last hour of cooking. *lf necessary to add more water add it before the sugar. - When cold, drain, remove stones, and keep prunes whole if possible. Add enough boiling water to the liquid to make four cups, and pour over four tablespoonfuls granulated gelatine softened in one-half cup cold water. Strain, add' one-half cup sugar and prunes. Mould and chill. Servo with or without cream.
Household Hints.
/ If a tooth-brush which is new is soaked overnight in a glass of water it will prevent the hairs coming out, and will last much longer.
Clean soiled light cloth garments by rubbing them with hot salt.
To save coal, try dissolving two tablespoonfuls of salt in one pint of water and sprinkling it over*)i hundredweight of coal. ■ Coal will burn more slowly and last much longer as a result.
Tea and coffee pots that have been laid aside for some time often have a disagreeable, musty smell. To prevent this, before putting the pot away wash it thoroughly in hot water to which a lump of soda has been added. Then rinse it with cold water, and leave to dry.
Scatter salt on a carpet when sweeping and you will not only find it has a cleansing effect but that it also keeps away moths.
To remove red ink stains from table-linen, spread fleshly-made mustard over the stain and leave for half an hour. Then sponge off, and all trace of the ink will have disappeared.
Equal parts of ammonia and turpentine will take paint out of clothing, no matter how dry and hard it may be. Saturate the spot two or three times, and afterwards wash out in soapsuds.
