THE type of all-in-one dish which combines meat or fish with vegetables is specially suitable for this purpose. Clean and flour the fillets and season them with salt and pepper. Mix the breadcrumbs with the herbs, seasoning, and lemon juice and add just enough beaten egg to make a stiff mixture. Put a spoonful of stuffing in the centre of each fillet, roll the fish around it, and secure each roll with a sharpened matchstick or a piece of cotton. Cook the onion with the potatoes, remove it with j pint of the potato liquor, chop it up, and return it to the liquor with the milk. Melt the dripping in a saucepan and stir in the flour and a good sprinkle of salt and pepper. Cook these for a minute or two before gradually adding the milk and water and chopped onion.. Continue to cook and stir the mixture

until it becomes a smooth white sauce. Stir in the parsley. Put a bed of mashed potato into a deep baking dish, leaving spaces at intervals for a fillet. Stick the fillets in place, cover them with the sauce, and put the cut up tomatoes at intervals between the fish. Bake the dish for about 30 minutes in a moderate oven. Garnish it with parsley. Soused Herrings 6 large herrings 6 peppercorns 1 pint of vinegar Salt and pepper 3 bay leaves Split the herrings down one side and dust inside the fish with salt and pepper. Put the vinegar in a saucepan with the bay leaves and peppercorns, bring it to the boil, and allow it to simmer for about 10 minutes. Arrange the fish in a pie dish or casserole and pour over it the flavoured vinegar. Bake it for 30 minutes in a moderate oven. Serve the meal hot or cold. Meat Loaf IJIb. of sausagemeat Pinch of sweet herbs 2 breakfastcups of Sage fresh breadcrumbs Browned breadcrumbs 1 egg 1 dessertspoon of Juice of i lemon chopped parsley Mix together all but the browned breadcrumbs, blending the ingredients really well. Pack the mixture into a greased loaf tin and bake it in a moderate oven for 45 minutes. Turn the loaf out and coat it with browned breadcrumbs. Serve the loaf hot with vegetables and gravy or cold with salad.
