WHAT IS WHISKY?
An article on “Scotch Whisky” in “The World’s Work” gives some interesting figures respecting the production of this beverage. In Scot’and there are altogether 164 whisky distilleries, although only 150 of these were in actual operation during the fiscal ending March 31, 1907. Of these 164 producing works, 11 are equipped for the production of grain whisky, only three for both grain and malt, 98 for Highland malt, 23 for Lowland malt, for Islay malt, and 21 for Campbelltown malt. The exact quantity of ma’t whisky made in Scotland is not recorded, but, broadly speaking, it may be said that two-thirds of the entire product are made by the patent still and onethird by the pot-still. And all the malt whisky is made by the pot still with the exception of one distillery. But in Scotland the majority of people do not
think either all-ma’t or all-grain spirit, but a judicious mixture of botn; and the mixing is the art of the blenders whose name is legion and whose collective operations are enormous.
Everyone passing through Otahuhu knows the Star Hotel. Mr J. J. Russell has a maxim that if one keeps a good table, the best brands of liquors and comfortable accommodation, one is bound to get customers. This is proving correct, for the Star is as popular a hostelry as can be found along the main road south. In addition to home comforts there are good paddocks, commodious stables, and everything the traveller could wish for.
