STRAWBERRIES DAINTILY SERVED.
Bake ordinary sponge cakes and remove the centres carefully. Soak some angelica until you can bend it, cut it in strips, and nut one over each cake so as to make handles. Fill the basket with berries, and sqrinkle the tops with sugar. Plain hulled strawberries served as a first course in little wicker baskets are a dainty luncheon course. Strawberry parfait is another delicious sweet. Mash a pint or so of berries, cook them until soft with half a cup of sugar beat in the whites of two eggs, set them to cool and then into this pour slowly threequarters of a cup of rieh syrup, and beat until all is quite eold. Add last a pint of whipped cream. Bury the mixture in iee and salt for four hours, and then serve it.
