Croquettes op Fish.—lf you can give me any good recipes for these you will confer a great favour on me by publishing them in your next issue.—Toots. Mould of Rice. —I saw at a small dinner the other night a firm form of rice with an arrangement of fruit in the ■centre. 11 was very firm and nice. Can you tell me how it was made ?—Maude.
