THE DAIRYING INDUSTRY.

OUTLOOK FOR SEASON. PROSPECTS EXCELLENT. The outlook for dairy produce is reviewed in a circular issued to dairy factories yesterday by A. S. Paterson and Co., Ltd. Latest quotations from London, they state, are ■ —New Zealand butter, 180 s to 182 s per cwt. Cheese, 104 s to 105 s; Canadian cheese, 106 s. Both markets are " generally quiet." " The cheese prices," states the circular, " make very attractive reading for all cheese factories, and particularly for those who did not dispose of their earlier make.

" The butter market has been, and is in a fairly quiet state, and the beneficial rains experiencel in Australia recently are no doubt a factor. Both New South Wales and Queensland have had good rains practically throughout the whole of the two States, particularly New South Wales, where the downfall has been complete. As the hush production of these two States commences later than that of Victoria, a good producing season should be experienced in New South Wales and Queensland, in spile of the dry conditions which prevailed until recently. Weather conditions in the Argentine are still unfavourable; from a production viewpoint. " The. future of the United Kingdom butter market is in the melting pot to a certain extent. As against moderate stocks in London, together with shortage of supplies from some countries, we have on the other hand a possible shrinkage in consumption on account of high prices, together with anticipated, increases in production from other countries, particularly New Zealand,' provided that favourable weather conditions are experienced in this country. " If prices on the London market do not appreciate further, consumption, which has Been excellent up to a present time, running over (U)OO-tons a week, may'not be materially reduced. It would probably be in the interests of the producers in this country for prices not to go very much higher, because to keep up a steady and liberal consumption of butter in. the United Kingdom is of far more importance than the lifting of prices much higher than where they stand to-day."
