Sir,—ln your issue of the 7tk July there appeared a report of a meeting held by soonle of the Waverley supplies, at which a Mr. Nelson was airing bis grievances about the existing mewnods of milk testing. I think it is quite possible to get a fair sample of imilk, if sufficient mile b© taken, under existing conditions., That is when a supplier has «more than one weighing, a proporfciionate sample be taken. Meaning— when the weigh-can is full take &> full dipper: when half-full only half a dipper and bo on. I also read Mr. Thompsons letter in the "Dairyman/ and would like to point out to Mr. Neilson a fact which Mr. Thompson no doubt overlooked, via., [had Mr. Thompson been taking his sample ty the dirip method he would' 'have hadl twice the quantity out of the second weighing, which would have brought out the correct quantity of butter fat. Mr. Thompson's illustration, if I remember lightly, •was this: Take 100 milk at 6 per cent., 6 lbs, butter fat, take out one dipper as sample; another 100 at 6 per cent.,.6 lbs. add 100 lbs. water; take out one dlipper bs sample; wfhichi would give*an overage test of 46, giving a total of 13.5 lbs. fat, which would give a earn of 1.5 lbs. Now, after adding the water, Mr. Thompson should have taken two dippers full out of that -weighing, which would give an average test of 4 per cent., which would give the oorreob quantify of butter fat.
