Mimosa Cake.

To-day’s Recipe.

1 cup castor sugar 5 cup milk 3 drops almond essence 2 cups flour 3 cup coconut 3 egg whites i cup butter i teaspoon lemon essence 3 teaspoons baking powder i teaspqjpn salt Beat butter and sugar to a cream. Stir in essences. Sift flour, salt and baking powder together, then stir in alternately with the milk. Add the coconut and beat well, then fold in the stiffly beaten egg whites. Bake in a well-buttered cake tin for 45 minutes. When cold cover with water icing flavoured with lemon juice.-—Sent in by “ Pam,” Shirley.
