BUTTER AND CHEESE.

PROMISING LOCAL INDUSTRY

The success of the Temuka Butter and Cbevse Factory, which has now been run-; ning for four seasons, and where operations are in full swing for the approaching manufacture of cheese on the Ist proximo, continues. During the. year the factory. was open for the receipt of milk, and eoJ satisfied are the suppliers that extra accommodation is being prepared for the increase anticipated during the year. A pleasing feature with the Company is that the highest pric*t> in Canterbury -since th« inception of the indurtry have bw-n paid, and farmers are fortunate that the man-, agement consider their interest, as has been done in the past. The proprietors, Messrs J. H. R. Taylor. Geo. Henderson, and J. W. Burns, anticipate giving a con tinuance of top prices for butter fat during the coming season. Already th<» reputation of tho Companye cheww and butter products has attained a high standard here and in the Home markets, and the 6upply is not equal to the demand. During the past week a southern buver. who purchawd the Company's output of cheese for last year, has approached the proprietors and c<mpfered " a mn«ra.:t: for 120 tons of cheese at 6id pe r lb on trucks at Temuka. The prnsneots for the are nar'icularly bright; tlie factory is treating at present about 600 gallons per diem; and this : s expected to increas*? to 2000 gallons as the season proceed*. Feed has come away very rapidly during the past fortnight, and there are indications that dairy farmers in the Temuka; district will net excellent returns from their herds. Xotwiths'anding opposition, tho : ndustiv has thrived in Temuka, and its benefit to (he district can be understood when it is mentioned that £21.000 has been distributed to dairy farmers .--ince the industry first mmm'entvd in Temuka. Oue of the largest suppler* during the p»*t year. Mr Joseph Ash well, who experimented with two Lawrence-Kennedy milk ing machines, is so w<U pieced with the work that he has installed two more ma chines for the approaching season, and anticipates supplying the milk of over 100 cows. It will "be, then-fore, seen that the. industry has come to s'ay in Temuka. and with careful development there : s n<> reason why South Canterbury should not tuni it.s attention to a profitable and permanent adoption of a !»♦>«• neaps of pro. duttion of wealth. The proprietors are to he congratulated on th* surees* *'- iained, and it is sure that the uphill fight they encountered in the face of ke-'-n mmpeti ion will be, more than rewarded by an increased patronage from the stippli«-rs in the Temnkn and surrounding d -uicts.
