APPLE PUDDING Cream 2 tablespoons butter with 2 tablespoons brown sugar, add i teaspoon' ground cinnamon. Spread some of the mixture round the inside of a round cake tin; cut some thin slices of brown bread into 2-inch strips, spread with the butter mixture, and line tin, taking care to overlap each strip. Peel, core and slice 6 cooking apples . and pack in layers in prepared tin. Between each layer sprinkle a little sugar mixed with 1 dessertspoon fine breadcrumbs and a pinch ground cloves. Have the apples piled higher in the centre than the sides as they always sink in the middle when cooked. Pour over 3 tablespoons water and bake in a moderate oven for about 1| hours. Turn out and serve with cream or boiled custard.
