NORWEGIAN PRUNE PUDDING | pound (15) prunes. 31 cups cold water. 1 cup sugar. 1 teaspoon lemon rind (finelygrated) . J teaspoon cinnamon. cup cornflour (5 tablespoons). 2 tablespoons lemon juice. i teaspoon salt. • Soak prunes for twenty-four hours in cold water. Cook gently till tender in same water. Strain and remove stones. Mix cornflour, sugar, salt, cinnamon and lemon rind with enough water to make a paste which will just pour. Add to three and one-third cups prune water and boil for five minutes stirring constantly. Cool slightly and add lemon juice. Pour into a dish and leave to cool thoroughly. Unmould if desired and garnish with whipped cream and cherry. SARAH.
