SUGAR IN BREWING
Sir,—ln your local and general notes on Thursday you had an article from your Wellington correspondent, which stated that the brewery trade used 51b of sugar to make 300 bottles of beer, and that it took 3001 b of sugar to make 300 bottles of cordial. The carbonated water and cordial manufacturers have made very few cordials (syrups) since rationing was introduced. Owing to the large amount of sugar required to make them they have concentrated their business on the manufacture of carbonated waters. From the April issue of the Abstract and Statistics we glean the information that 1164 tons of sugar was used by tire brewery trade, and that 28,569,935 gallons of ale and , stout was manufactured.—a magnificent ’ quantity!—The carbonated water and cordial manufacturers’ allocation of sugar for the last 12 months was approximately 3000 tons, not 60 times the quantity used by the brewery trade as one would believe from reading the figures quoted in your article. —I am, etc., E.
