KITCHEN HINTS.
Dried eggs will make up into delicious scrambled eggs if beaten up to a cream witn a little milk. Grating dried cheese on a rasp is a tiresome and laborious task. If a small cutter is used, and the dry cheese broken into small pieces, the minehing machine provides an easy way of preparation. Thin, poor cream is sometimes difficult to whip. Try adding a littlo cornflour, when it will become quite stiff and thick. Add half an eggspoonful to each gill of cream. To Make Stock in a Hurry.—Allow one tablespoonful of gravy powder to one quart of water. Mix powder smoothly with a little cold water, boil remainder of water, and pour over the mixed powder; add a few vegetables, herbs, peppercorns, and one or two cloves, and simmer for one hour. To Save Apron Pockets.—Apron pockets often cateh on door-knobs and cause a rent not easily concealed. To prevent this, rip the pocket down an inch on either side, finish with a hem and sow a, fastener at the top. Then, when the pocket catches, the fastener loosens, and no rent is made.
