QUALITY OF CHEESE
Sir, —As a cheese official I would like to make a few remarks in reference tq the letter signed "Cockie." In the first place, how many farmers wash out their milking machines after each milking? Very few, I am afraid. In many cases they are left a day or two. The result is bad flavours, and factory managers are compelled to accept this milk and expected to manufacture a high-class product. The defects in cheese about which complaint is being made are, in my opinion, caused through dirty machines and insanitary conditions in and around milking shells. In conclusion, let "Cockie" preach the gospel of cleanliness to his erring brothers and I am sure that his fears regarding the abilities of cheese officials would quickly vanish. Cheddar.
