CHUTNEY
Chutney is easily made at home, and is economical to have in the store cupboard. Here is a reliable recipe. For it you require 41b. tomatoes, one quart vinegar, ilb. fine salt, £lb. dates, £lb. stoned raisins, 2oz. ground ginger, onions, lib. brown sugar and half a dozen chillies. Wipe the tomatoes and wash, then dry the dates, removing stones. Put dates and raisins through a mincing machine, chop the onions finely. Put into a preserving pan with all the seasoning ingredients and part of the vinegar, and thoroughly mix. Cut up the Jomatoes and add them to th© pan with the remaining vinegar. Boil for three-quarters of an hour, pour into warm jars and tie down hot. Store in a cool, dry place.
