SAVOURY WAY WITH POTATOES
Allow one large potato for each person iWash thoroughly, but do not peel. Cut off a small piece from both ends of each, and hollow out from one end only, stopping before you get right through. Stuff the hollows with a savoury mixture of breadcrumbs, a chopped onion, mixed herbs, a little grated cheese if liked, salt and 'pepper. Close the hollows with butter. Stand the stuffed potatoes on a tin, buttered endi up, and bake until quite cooked.' Serve hot.
