SAVOURY RABBIT
Take one rabbit, two carrots, one onion, two bay leaves, a few peppercorns, one ounce flour, two ounces bacon, salt, and pepper, one and a-half pints water, and parsley/ Wash, dry and joint the rabbit neatly. Fry the bacon, cut into squares, until nicely browned. Remove the bacon and brown the. rabbit in the fat. Lift out. Fry the finely-minced onion until light brown, add the flour, and brown well. Add the water and stir till it boils. Return rabbit and bacon to the saucepan, add flavouring, also carrot cut into long strips. Simmer slowly until tender, stirring occasionally. Serve on a hot dish, gprihkle parsley over. A good and economical dish.
