PRESSED HAM
Delicious to eat and one-third the cost ©f " boiled " ham. Obtain a boiling piece of bacon, with hock attached. This #ut is about 61b. weight. Boil gently until bones can be easily taken out —about four hours. Pack meat into a round cake-tin. Place a plate a little smaller than tin on the meat, with a heavy weight on the top, and leave till cold—overnight is best.
