CROQUETTES OF POTATOES.
Two pounds potatoes, 2oz. butter, one egg, salt and pepper. Boil the potatoes until soft and rub them through a sieve; put the butter and seasoning into a saucepan and when it is hot turn in tho potatoes; drop in the egg and mash them smoothly; spread on a plate till cold, then make up into balls and croquettes. Cover with egg and breadcrumbs and fry in hot fat. Dish on a paper or napkin and garnish with fried parsley.
