TO ICE A WEDDING CAKE.
To ice a cako lOin. across, you need 41b. icing sugar, lib. ground almonds, three lemons, and two egg?. Make the almond icing first by mixing together;all tfie ground almonds, lib. of the icing sugar, the juice of one of the lemons, urid the unbeaten yolks of the two eggs. Mix all together till stiff, but ,pliable eftotigh to knead with the hand. Spread the mixture evenly ou the cake, and press smooth with a hot knife. 'Jlien make the white icing .'by mixing" tqgether the other 31b. icing sugar, the whites of the ' two eggs slightly beaten, and the juice d£ the two lemons. A little hot water may be mixed in also, according to judgment. The icing must be stiff enough to spread without running. -Spread over the almond icing with a knife dipped in hot water, and leave to harden.
