SELF-HELP IN THE KITCHEN
’ In the endeavour to attract new customers, a New York lunchroom has hit on the idea of providing a additional room, in which its patrons can cook their own meals. The novelty ha.T caught on to a degree that has surprised the management. When this supplementary kitchen was opened it was expected that it would be used almost entirely by the girls who were dissatisfied with the fare supplied them in lodgings or hostels. Actually many others, including men as well as women, have availed themselves of this chance to show their skill in cooking. The kitchen is well equipped, even to the extent of providing aprons and chef caps. It supplies the necessary ingredients, and takes all responsibility for the washing-up after the cooking. Customers need not restrict themselves to the frying of eggs or the preparation of other simple dishes. Some of them make omelettes and salads, or even concoct cheese souffles.
