W.E.A. Lecture
1 1 The weekly lecture held under tho f auspices of the W.E.A. was again well j attended. Dr. H. R. Whitehead gave t ) j his second address on * ‘ Bacteriology, . his subject being “Bacteria in Induso try. ’ ’ Dr. Whitehead described in de- □ tail the part played by bacteria in the s carbon and nitrogen cycles in nature, t Micro-organisms were shown to play an . essential part both in the decomposition of waste matter in order to re-liberate .• the elements and also in the synthesis of 1 (for instance) nitrogenous compounds y from atmospheric nitrogen. The role 1 of yeasts in tho production of beer and ! w ine and also in the manufacture of - bread was described. The desirable and - undesirable effects of bacteria in milk i and milk products, and the methods t used for controlling the activities of the organisms were dealt with in detail. 3 Finally it was shown how a knowi ledge of the nature of bacteria is made * use of in tho preservation for storage . of many food-stuffs, with the result that 3 regular supplies are more easily avail--1 ' able. Mr. T. Dewin (chairman) in thanking Dr. Whitehead, expressed the appreciation of all present and hoped for a much larger audience for Dr. final address, “Bacteria in Disease.”
