SCHOOL LUNCHES SARAH ANNE RHODES FELLOWSHIP IN HOME SCIENCE An adequate diet for growing children is of the utmost importance. Wellbuilt bodies, good health duo to a highresisting power, good dispositions, bright i ntelligenee, and abundant energy result only when tho child receives adequate nourishment. Following the “diet chart,” let us consider the child’s special requirement of each of the different food classes. Sandwiches.—White, whole wheat, raisin, rye and brown bread or wheatmeal biscui ts may be used. Fillings may be:—Peanut butterthinned with salad dressing, cream or honey. Nuts.—Ground or chopped finely and mixed with salad dressing. Finely chopped celery, dates or raisins may be added, or cottage or cream cheese. Lettuce.—Spread with a little salad dressing. Lean Meat.—Beef, lamb, tongue ham, chicken, sliced thin or chopped and moistened with salad dressing. Fish.—Salmon, sardines, moistened with salad dressing or lemon juice. Dggs.—Hard cooked and chopped and mixed with a little salad dressing. Cheese. Jelly of v arious kinds. Vegetables or Fruit.—Sliced apple, onions and greens, ground carrots oi cabbage moistened with hot butter. Sample Menus For Lunch Boxes. 1. Plain aread and butter sandwiches or wheatmeal biscuits. Prunes stuffed with nuts and cottage cheese. Apple. Cup custard. 2. Peanui; butter sandwiches. Lettuce sandwiches. Cup stewed apple. Oat meal cookies. 3. Brown bread and cottage cheese sandwiches. Celery, wiith small package of salt. Dates. Peach tapioca. 4. Chopped meat sandwiches. Jelly sandwiches. Baked apple stuffed with nuts and raisins. Sponge cake. The mother is responsible for combining all the necessary foods in a form in which they can easily be carried. Ways of increasing milk content are —a small jar of custard or milk pudding or-mfk jolly, and a small bottle of milk to drink. The complete lunch should contain somei fruit (to he eaten last to clean the tenth and stimulate the flow of-saliva). Daintily-made sandwiches and attractive wrapping help both appetite and digestion. Newspaper is not good. A small biscuit tin makes a good container, and a screw-top jar makes an excellent carried for fruits and puddings in the school lunch.
