A MONSTER CAKE.
A monster cake, weighing approximately 4801 b, has been baked for the Bketahuna jubilee celebrations. Included in the ingredients aro 601 b of butter, 600 eggs, 571 b. flour, one bottle of whisky, two bottles of port wine, 951 b mixed fruit besides 101 b of special fruit, oranges, Cherries, etc., and 41b of mixed nut 9. Two bakings were necessaray for the cake, which was made by Mt J. A. Taylor; and five days in all were spent in mixing and baking, and a further two days for icing. One hundredweight of icing sugaT was required to ice the cake, aud 2olb of white of egg was used. Considerable difficulty attended the icing of such a large surface ou account of the icing drying so quickly in the heat, but an excellent job has been made.
